Serves 4

Ingredients

For the Salmon

  • 4 salmon fillets, about 6 oz each
  • 1 tablespoon olive oil
  • 1–1½ teaspoons Cape Ann Sea Salt Co. Dill Sea Salt
  • 1 lemon, cut into wedges

For the Lemon-Dill Crème Fraîche

  • ½ cup crème fraîche
  • 1 teaspoon fresh lemon juice
  • ½ teaspoon lemon zest
  • 1 teaspoon finely chopped fresh dill
  • Pinch of Cape Ann Dill Sea Salt

Directions

  1. Preheat oven to 425°F. Pat the salmon dry and place on a parchment-lined baking sheet.
  2. Brush the salmon lightly with olive oil and season evenly with Dill Sea Salt.
  3. Roast for 10–12 minutes, depending on thickness, until the salmon is just cooked through and flakes easily.
  4. Meanwhile, combine the crème fraîche, lemon juice, zest, fresh dill, and a small pinch of Dill Sea Salt.
  5. Spoon a little lemon-dill crème fraîche alongside each salmon fillet and serve with fresh lemon wedges.

Serving Suggestion: Pair with roasted baby potatoes, asparagus, or a crisp cucumber salad. Finish the salmon with one final, light sprinkle of Dill Sea Salt just before serving.
