Lemon Herb Shrimp Pasta with Dipping Blend Sea Salt
Serves 4
Ingredients
- 1 lb large shrimp, peeled and deveined
- 12 oz linguine or fettuccine
- 3 tbsp extra virgin olive oil
- 2 tbsp unsalted butter
- 3 cloves garlic, minced
- 2 tsp Cape Ann Sea Salt Co. Dipping Blend Sea Salt, plus more to taste
- Zest of 1 lemon
- 2 tbsp fresh lemon juice
- ¼ cup dry white wine (or chicken broth)
- ¼ cup freshly grated Parmesan
- 2 tbsp chopped fresh parsley
- Freshly ground black pepper
- Lemon wedges, for serving
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta until al dente. Reserve ½ cup of the pasta water before draining.
- Pat the shrimp dry and season with the Dipping Blend Sea Salt and a few grinds of black pepper.
- Heat the olive oil and butter in a large skillet over medium-high heat. Add the shrimp and cook for 1–2 minutes per side, just until pink. Remove to a plate.
- Reduce the heat to medium. Add the minced garlic and cook for about 30 seconds until fragrant. Stir in the white wine and lemon juice, scraping up any browned bits. Simmer for 2 minutes.
- Add the cooked pasta to the skillet along with the lemon zest, Parmesan, and a splash of the reserved pasta water. Toss until the sauce lightly coats the pasta.
- Return the shrimp to the pan and toss gently until heated through. If needed, add more pasta water for a silky sauce.
- Finish with fresh parsley, an extra sprinkle of Dipping Blend Sea Salt, cracked black pepper, and serve with lemon wedges.
