Pan-Seared Scallops with Brown Butter & Black Garlic Smoked Sea Salt

Ingredients
- 8–10 large sea scallops
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 1 small garlic clove, lightly crushed
- 1 teaspoon fresh lemon juice
- Cape Ann Sea Salt Co. Black Garlic Smoked Sea Salt, to finish
- Freshly ground black pepper, optional
- Lemon wedges, for serving
Directions
- Pat the scallops very dry with paper towels. This is the secret to getting a beautiful golden crust.
- Heat olive oil in a heavy skillet over medium-high heat until shimmering.
- Add scallops, leaving plenty of room between them. Sear without moving for about 2 minutes, until deeply golden. Flip and cook for another 1–2 minutes.
- Reduce heat to medium. Add butter and crushed garlic. As the butter begins to brown, spoon it over the scallops for about 30 seconds.
- Remove from heat and add the lemon juice.
- Plate immediately and finish each scallop with a light sprinkle of Black Garlic Smoked Sea Salt.
Serving suggestion: Pair with silky cauliflower purée, risotto, or a simple lemon-dressed arugula salad. The sweet scallops and brown butter play beautifully against the smoky, umami-rich salt.
