Smoked Ghost Pepper Honey Chicken Thighs

Ingredients
- 6 boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 tablespoon fresh lime juice
- 2 cloves garlic, finely minced
- ½ teaspoon smoked paprika
- ½ teaspoon Cape Ann Smoked Ghost Pepper Sea Salt, plus a little more to finish
- Fresh lime wedges, for serving
Instructions
- Make the glaze: Whisk together the olive oil, honey, lime juice, garlic, smoked paprika, and Smoked Ghost Pepper Sea Salt.
- Season the chicken: Add the chicken thighs and toss until evenly coated. Let rest for 15–20 minutes.
- Sear: Heat a large skillet over medium-high heat. Add the chicken and cook for 5–6 minutes on the first side, until deeply golden and lightly caramelized.
- Finish: Flip and cook for another 5–7 minutes, or until the chicken reaches 165°F. Lower the heat if the honey begins to caramelize too quickly.
- Serve: Transfer to a platter and spoon the sticky pan glaze over the chicken. Finish with a very light sprinkle of Smoked Ghost Pepper Sea Salt and a squeeze of fresh lime.
Serving suggestion: Pair with creamy coleslaw, grilled corn, or a simple avocado salad—the cool, fresh flavors balance the smoky ghost pepper heat beautifully.
